How was this Monday?
It's dinner time, it's better to stay light and prepare something really nutritious.
Let's try a new recipe - Scaled chicken with coconut and curry -
Timer: max 15 minutes
What ingredients do we need?
Half an organic chickenHalf a cabbage
Some salad leaves
3 cloves garlic
1 onion
1 lemon
Rosemary/Origano
EVO oil
Coconut oil
Curry
Salt/pepper
Preparation:
Step 1 Brown the pan with oil and cook coarsely chopped garlic and onion, add the cabbage in pieces, cover the pan and cook slowly (perhaps adding hot water);
Step 2 Slice the chicken and soak with salt, pepper and lemon for a few minutes and then add to the pan along with the finely chopped lettuce leaves;
Step 3 If the cooking is homogeneous, remove the lid to add 50 grams of coconut and 20 grams of curry, mix in cooking without drying everything;
Final step When cooked in a nice dish we pour our meal and decorate with rosemary and ground oregano.

Let's try a new recipe: - Chicken and Pumpkin Chunks -
Timer: max 15 minutes
What ingredients do you need?
Pumpkin (about 200 grams per person)
Chicken (about 150 grams per person)
1 onion
Fennel seeds
Curry / salt
Evo Oil
Rocket salad
Preparation:
Step 1: Cook the pumpkin, cut into small cubes together with the chopped onion, oil and salt over medium / low heat (add a little water if necessary).
Step 2: When the pumpkin becomes "pulpy", add the chicken cut into strips, fennel seeds, curry, another bit of salt.
Step 3: When the cooking seems homogeneous, prepare a dish with rocket and parmesan flakes and pour the contents.
Final step: You can serve the dish with a sprinkling of chili pepper.

Step 2 → Gradually add 3 normal spoons of rice flour (a little at a time to avoid lumps) mix gently until you have a uniform mixture;
Step 3 → Brown the coconut butter in a large pan and shortly after add your dough: you can choose whether to make a large pancake / or individual pancakes;
Final step → Cook (without lid) the two parts individually and at the end of cooking add organic honey on the surface → serve with a sprinkling of coconut and a fruit to taste;
* The success of the pancake consists in the fact that your dough should not stick to the pan but navigate gently on its sides!

Step 1 --> mix eggs and honey and butter, then add the flours gradually;
Step 2 --> blend pumpkin and raw carrots and put in the dough stirring gently;
Step 3 --> when the dough is homogeneous add the lemon, yeast, salt and cinnamon to taste, bake at 180 gr for 30 minute.

A very quick dessert!
Double crêpes with cranberries and chocolate!
What ingredients do you need?
6 eggs
3 tablespoons of rice flour
A pinch of salt
Ghee butter
1/4 yeast / baking soda
1/4 yeast / baking soda
Blueberries and ciccolat flakes
Step 1 → Gently mix all the ingredients in a bowl and when everything is homogeneous, add little by little in the pan (with ghee butter);
Step 2 → Once both sides are golden brown, overlap the various crepes by adding blueberries and chocolate flakes;
Steep 3 → In the last part of our mountain, gently add some hot chocolate like if it was snowing;
It's a light dessert with the necessary nutrients → proteins, good fats, carbohydrates, antioxidants!

What ingredients do you need?
3 eggs
100g organic honey
80g evo/butter ghee oil
100g pumpkin
100g carrots
150g rice flour
50g rice flour
Gratuized lemon peel
1 tablespoon baking powder /bicarbonate
Salt
Cinnamon

Step 1 --> mix eggs and honey and butter, then add the flours gradually;

*Don't worry if your cake doesn't swell so much, it's normal this is a natural cake with the right nutrients;

Step 1 - cut the pumpkin into small parts and slowly cook together chopped onion, oil and salt over medium low heat (add a little water if necessary);
Step 2 - When the pumpkin cooking is homogeneous, add the cut chicken gradually adding the curry and fennel seeds;
Step 3 - When cooked, on top of a plate form a bed of arugula and put your meal with the addition of a little chilli.
It's a very fast recipe that won't take that long!
